Meet Your Truffle Farmers: Behind every truffle at the stall are Marc and Kathryn, passionate truffle farmers dedicated to bringing the finest truffles from their farm to your table. Their journey began with a love for fine food and a dream to cultivate the earth’s hidden treasures. Marc, born in the culinary capital of Paris, has called Australia home since 1981. Kathryn, originally from London, has embraced the Australian way of life since 1975. Together, their diverse backgrounds blend the best of European tradition with the fertile soils of New South Wales.

A Dream Planted in the High Ranges –in 2017, Marc and Kathryn found their slice of paradise in the high ranges between Queanbeyan and Braidwood, and decided to turn their truffle farming dream into reality. With the invaluable help of family and friends, they planted their truffle trees over Easter in 2019. The moment they unearthed their first truffles a few years later was nothing short of magical, and it marked the beginning of Harolds Cross Truffles as we know it today.

The Highest Truffle Farm in the Region- Nestled over 1000 metres above sea level near the serene Tallaganda National Park, just an hour from Canberra, Harolds Cross Truffles is the highest truffle farm in the region. Their dark chocolate-coloured Tuber melanosporum black winter truffles are celebrated for their rich, earthy aroma and exquisite mushroom flavour, a result of the pristine environment and the meticulous care taken in every stage of production. The Canberra region’s cool climate provides over 1200 chill hours between April and October, which enhances the aromatic qualities of the truffles. This careful balance of environment and cultivation ensures a luxurious and unforgettable culinary experience, and it is exactly why this winter season is the perfect time to taste what Harolds Cross Truffles has to offer.
